Chicken Soup with lime and cilantro

This is so easy and delicious.

a couple tablespoons garlic oil
2 thick slices of red onion
1 celery rib, diced
2 carrots, diced
2 cans chicken broth
1 can hominy, drained
1 red serrano chile, minced
1 teaspoon ground coriander
1/2 cup minced cilantro
1/4 cup minced green onion tops
2 cups  cooked, shredded chicken
juice of 1 lime

Heat up the oil and fry the onion until soft and browned.  Remove the onion and discard.  Add the celery and carrots and cook until they start to get soft.  Add the chicken broth, hominy, chile, and coriander. Heat it up until it simmers and the vegetables are soft.  Stir in the remaining ingredients and heat through.
